Steeped in centuries of winemaking history, the soul of Château de Stony is rooted in a passionate family adventure.
In 1860, our ancestor Hippolyte Chavasse founded the 20-hectare Stony estate on the site of the medieval domain of Mattemale. He built the manor house in the elegant architectural style of the “Folies du Languedoc”, a testament to the region’s golden age.

At the very heart of the estate, we have carefully restored the Ramonétage, the former estate manager’s residence. Our renovation honors the original structure, using only natural and eco-friendly materials such as wood, lime plaster, and bio-sourced insulation. We even integrated a phytopurification system for sustainable wastewater management.

A PERFECTLY BALANCED ESCAPE
Ideally located just 6 km from Sète, we sit between the Étang de Thau (famous for its oyster beds) and the Mediterranean Sea (beaches just 10 minutes away). Explore the Massif de la Gardiole (1 km away) or reach Montpellier in 20 minutes.
Although close to the village, our estate remains an oasis of tranquility. It is the perfect vineyard retreat to disconnect, breathe, and immerse yourself in the world of organic wine.
